I'm looking for an authentic Tex-Mex recipe for Carne Guisada. Can anyone help?

I'm a Texan living in Colorado and the people up here have never even heard of Carne Guisada. I am missing it a lot and with the cold and snow about to set it, I want to have the recipe on stand-by for those days when comfort food is needed to fuel the soul.
